If there is one thing that makes Africa so charming, it's its delicious, varied and original cuisine. The beautiful continent is full of various culinary specialties from one region to another. For the pleasure of your taste buds, here is our selection of 10 of the dishes we love the most and we recommend you absolutely try.

1. Ndolè

Ndole dish from Cameroon

An all-star meal amongst Cameroonians, Ndolè is an absolute must-try made from bitter plants called Ndolè (hence its name). Preparing the dish consists of collecting a few leaves and boiling them several times to remove the bitter taste. The texture and color should be close to spinach. It is served with meat cooked in small pieces, smoked fish or shrimp for protein and with plantins and/or cassava. Ndolè, though present in Nigeria, is the traditional Cameroonian dish. Its leaves are even exported to many places around the world. Be prepared to discover a taste like you never had before.

2. Garba

Popular dish from Côte d'Ivoire, Garba consists mainly of attiéké, which is a kind of semolina made from cassava but a little more acidic taste. It also includes seasoned fried tuna, fresh chili, tomatoes and onions. The dish is usually accompanied by some meat or fish with vegetables and a small sauce. Garba is a very popular dish in Côte d'Ivoire and we absolutely love it!

3. Bobotie

South Africa is the land of the Impalas but the Rainbow Nation also has Bobotie, a dish made with spicy ground meat, egg and milk soaked bread. This superbely delicious mixture is then baked in the oven for the greatest pleasure of the palate. Bobotie is  believed to have been imported by Dutch in the 17th century. This dish is found in some countries around South Africa but also in Argentina, where a group of Dutch settled. 

4. Mafé

Called Mafé in Senegal and Tigua Dégué in Mali where it's originally from, this dish is very popular in West Africa and some parts of Central Africa as well. It is made with white rice, peanut sauce and meat. It can be eaten with fish, chicken or simply with vegetables. Miam Miam...

5. Doro Wat

In any Ethiopian or Eritrean restaurant in the world you are sure to find the amazingly delicious Doro Wat. Made with chicken and a super spicy sauce, the dish can be eaten alone without accompaniment. However, it's often served with Injeera (Ethiopian flatbread or pancake) and also vegetables and eggs in some cases.  

6. Thieb

We looove Thieb!! In some West African countries, it is called "fat rice", but it is actually a Senegalese dish that is widely known as the pride of Senegal as well as its main meal. There are two variations of thieb, the more classic thieboudienne which literally means "rice with fish" and the thiebouyappe which is a variation replacing fish with meat. The Teranga dish is also usually served with lost of vegetables. 

7. Yassa

Another one of our favorite dishes comes to us from Senegal. Yassa, to be eaten without moderation, is a result of a well seasoned poultry, meat or fish, lots of onions and a well cooked rice. It is also a very famous dish, liked by many. Very easy to prepare, it only requires to cook the white rice on the side, and mix the onions and lemon together in a pan. The most famous version of the meal is definitely the chicken Yassa. Try and we're almost certain that you'll love it too.

8. Soya

Very popular in Cameroon, Ghana or Nigeria, Soya, sometimes called Suya, Soukouya and kind of similar to Dibi in Senegal,  is a street food made of grilled meats with an incredible taste for the taste buds. The secret that makes this recipe so incredible is the unique blend of spices including paprika, ginger and cayenne pepper.

9. Okra Stew

One of West Africa's most famous sauces, okra stew is a particularly sticky mix made from the vegetable of the same name. It is called Takou in Guinea, Soupou Kandjia in Senegal, Kopé in Cote d'Ivoire etc. It can be cooked with smoked or fresh fish, shellfish, meat and sometimes even chicken. Some people add palm oil to it too. There is something for every taste. Okra or Gumbo is also a Soul Food dish, the typical black cuisine of the South of the United States. Don't hesitate to taste it , you'll absolutely not regret!

10. Poulet D.G

We end this list on a high note with the irresistible Poulet DG. Poulet DG, which means chicken of the general manager, is a Cameroonian dish that was originally reserved for people of a certain social importance, hence its name. This super easy-to-make chicken stew is often enjoyed with peppers, carrots and fried plantains. This dish never disappoints! Try, you won't regret it!
